Healthy Recipes for People




Mango & Cashew Rice

  • 2 cups Cooked Brown Rice
  • 1/2 medium Mango - diced
  • 2 tablespoons unsalted cashew nuts, chopped and lightly toasted
  • 2 sprigs Mint - chopped
  • 1 quarter lime
  • 1 teaspoon sesame oil

Mix juice from lime with sesame oil and drizzle over rice mixture.  Add mango, cashews, mint to rice and toss.

* olive oil may be substituted for the sesame oil.
