Slice zucchini lengthwise. Using a spoon scoop out the inside of the zucchini to form "boats" and place them in a lightly oiled baking dish. In a bowl, coarsely chop the
zucchini you have scooped out, add the garlic and onion, and toss with olive oil to coat. Fill the zucchini 'boats' with the mixture. Sprinkle with breadcrumbs,
cheese and season to taste with sea salt & pepper
Bake in pre-heated 350° oven for 20 - 30 minutes (zucchini will be fork tender).
