MANGO COUSCOUS

1 cup couscous
2 tablespoons olive oil
1 clove garlic, chopped
1 mango, peeled and cut into 1-inch cubes
1 jalapeno chili, seeded and finely chopped
1/2 cup raisins
1 ripe tomato, chopped
Juice of one lime
1/4 cup loosely packed cilantro leaves, chopped
1/4 cup loosely packed parsley leaves, chopped
Salt to taste

Prepare couscous and set aside.
 
In a large skillet over high heat, heat 1 tablespoon of the olive oil.  Add the garlic, mango and jalapeno.  Cook, stirring, for 3 minutes or until the mango begins to color lightly.
 
Stir in the remaining 1 tablespoon oil, the couscous, raisins, tomato, lime juice, cilantro and parsley.  Toss well and heat through.  Add salt.
 
Can be served hot or at room temperature.
